Vanilla Buttercream for Cupcakes
This creamy vanilla buttercream frosting is super easy to make in one bowl. You may have noticed that these cupcakes are loaded with frosting. That’s because I made one and a half times the frosting called for in the recipe. It’s my personal opinion that you can never have too much frosting, especially when it comes to this particular vanilla buttercream. If you follow the recipe for these cupcakes, you’ll end up with a more normal amount of frosting than what’s pictured.
- Cream the Butter and Sugar: Add butter to a large mixing bowl and beat until smooth. Add half of the powdered sugar and mix until it’s smooth and well combined.
- Add Milk or Water: Add the salt and 1-2 tbsp of the milk or water, mixing again until well combined. Then, add in your remaining powdered sugar and mix until smooth. You can add more milk or water to alter the consistency if you’d like.
- Pipe the Frosting: Pipe or spread your frosting onto your cupcakes, decorate to your liking and enjoy!
Cake Mix Recipe For Cupcakes
If you follow this Perfect Cupcake Recipe using a mix, you will be amazed that your batter is perfectly thick and creamy, not thin and runny like it is when you follow the box instructions.
Now I know it might seem strange that I’m telling you not to follow the instructions. As I write this I feel like I’m in an alternate universe where suddenly I’m my husband who likes to make his own instructions for every piece of furniture he puts together (in case you’re wondering yes, I say a little prayer in my head every time I take a seat on a something built by my husband). Just trust me on this one, the alternate universe feeling will be for the best.
For all of you strict rule followers like me, no need to fret, this little trick to doctor a cake mix will be the best rule you’ve ever broken (except for the times you would sneak off campus for lunch in high school because what’s better than getting away from the cafeteria food for an afternoon, am I right?)
Either way, you’re going to thank me for this cake mix recipe especially because once everything is said and done no furniture will be broken, and no detentions will be given.

Cupcakes are best the same day they’re made, but can be kept in an airtight container at room temperature or in the fridge for up to 3 days. Unfrosted cupcakes can be kept tightly covered at room temperature or in the fridge for up to 3 days, or in the freezer for up to 2 months. Thaw, still covered, on the counter or overnight in the fridge. Frosting can be kept in the fridge, covered, for up to 3 days. Before using, bring to room temperature and whisk until smooth.
If you want to prepare the cupcakes ahead of time, it’s best if you make the cupcakes and frosting and store them separately, then frost the cupcakes with frosting the same day or the day before you serve them. I had good results with storing them overnight in the fridge when I had to make them a day ahead. Always serve them at room temperature.
